Cadbury Egg Cookies


  • 1/2 cup Crisco (she used butter flavored)
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 t vanilla
  • 1 t baking soda
  • 1/2 t salt
  • 2 1/2 cup flour
  • 6 T. unsweetened cocoa powder
  • 1 10 oz. bag Cadbury Mini-Eggs

Preheat oven to 350 degrees. You'll need to chop up those Cadbury Eggs. I just put them in a ziplock bag and bang on them with a marble rolling pin until they look like the picture below. A hammer would work too.

Cream together the butter, crisco, brown sugar and white sugar. Add in eggs one at a time and the vanilla. In a separate bowl whisk together the flour, soda, baking powder, salt, and cocoa powder. Add the butter mixture to combine ,and then mix in the candies.

Drop onto a cookie sheet and cook for about 8-10 minutes (hers were always done in exactly 9).

Sunbeam Rolls


  • 3/4 cup milk
  • 1/2 cup sugar
  • 3 eggs
  • 2 pkgs. dry yeast
  • 1/2 warm water
  • 1/2 cup butter
  • 1 tsp. salt
  • 4.5 - 5 cups flour


Dissolve yeast in 1/2 cup warm water to which 1 Tbs. sugar has been added. Let stand while making dough. Scald milk (melt the butter in it while heating). Add sugar and salt. Place in mixing bowl. Add eggs and beat on #2 speed. Add 2 cups flour and continue to beat on number one speed. Add dissolved yeast. Beat 4-5 minutes or medium speed. Add another cup or more of flour. Turn out on floured board and add flour to make dough stiff enough to knead (not more that 1/2 cup). Place in greased bowl. Cover and allow to rise until double in bulk - about one hour. Knead down and cut into two equal parts. Cut like butterhorns.

Bake 350 degrees for 15 minutes.

Texas Beef Skillet


  • 1 lb. ground beef
  • 3/4 cup chopped onion 
  • 1 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • 1 (16-oz) can tomatoes
  • 1 (15.5-oz) can red kidney beans
  • 3/4 cup quick-cooking rice (Uncle Ben's)
  • 3/4 cup water
  • 3 tbls. chopped green pepper
  • 3/4 cup American cheese


In skillet, cook ground beef and onion till beef is brown and onion is tender. Drain off fat. Sprinkle meat mixture with chili powder, and salt. Stir in undrained tomatoes, undrained beans, uncooked rice, water and green pepper. Cover and simmer, stirring occasionally for 20 mins. Top with cheese. Serve in soft tortillas.

Chili


  • 2 12-oz cans of tomatoes
  • 1 1b. can of tomatoes
  • 2 large can of S&W kidney beans
  • 1 lb. ground beef (browned with onions)
  • 2 bay leaves
  • 2 T. chili powder
  • 2 T. brown sugar

Fry beef. Mix remainder. Simmer together. Serve with raw onion and grated cheese.

Vegetable Beef Soup

Makes 6 servings.

  • 1 pound ground beef
  • 1/2 onion, chopped
  • 2 (10.5 ounce) cans beef consumme
  • 2 cups water
  • 1 1/2 cups chopped fresh tomatoes or 1 (12-ounce) can dried tomatoes
  • 2 tablespoons sugar
  • 1 1/2 cups fresh corn or 1 (11-ounce) can corn
  • 2 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste
  • 1 cup grated mozzarella cheese

Brown ground beef and onion. In a large saucepan combine all ingredients except cheese. Cook uncovered until vegetables are tender. Add grated cheese to individual servings.

Orange Julius


  • 2/3 cup frozen orange juice concentrate
  • 1 cup water
  • 1/2 tray of ice cubes (I like more)
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 tsp. vanilla


Blend well in blender and serve.

Pretzel Bites



  • Texas size Rhodes frozen roll dough (as many as you want - each roll makes four bites)
  • Coarse salt
  • Parmesan
  • Garlic
  • Cinnamon/sugar

Take a thawed roll. Cut it in four equal sections. Place dough bites on greased sheets. Cover with plastic wrap that has been sprayed with non-stick cooking spray, and let dough rise until double in size (about 35-45 minutes).

Bring a large pot of water to a gentle boil. When dough has risen, plop about 10 pieces into the boiling water, tossing gently for about 45 seconds. Remove with slotted spoon, and place bites on paper towels to drain slightly. Move bites to greased baking sheets, and bake at 375* for about 15 minutes or until done and golden brown.

Brush bites with melted butter, sprinkle with Kosher or Sea Salt, dip in pizza sauce, roll in cinnamon sugar (you get the point).
