Pad Thai

This recipe is kinda just thrown together. Good luck :)

  • Rice noodles
  • Vegetables (my favorites are broccoli, peppers, carrots)
  • Peanut butter (crunchy or creamy)
  • Soy sauce
  • White rice vinegar
  • Red pepper flakes (optional)
  • Brown sugar

Follow instructions on box of rice noodles (they usually have to sit for 30 minutes).

Steam veggies.

In wok (or medium frying pan), combine: 3 big spoons of peanut butter, 30 shakes soy sauce, 30 shakes white rice vinegar, and 1/2 c. water (all measurements are approximate). Heat. Add red pepper flakes, and 2 T. brown sugar.

If the sauce is too thick, add more water. If it's too thin, add more peanut butter.

Add rice noodles and veggies to sauce. Mix.
